I love anything pumpkin flavoured! So one day I decided to look up vegan pumpkin recipes because I just happened to have some left over pumpkin puree. Turns out pumpkin pancakes exist! I tried it out and I don’t think I’d ever go back because these pancakes are to die for. I think there are a couple reasons why these pancakes are better than other vegan pancakes I’ve tried: 1. You have to curdle the almond milk which creates a buttermilk taste 2. The pumpkin puree makes the pancakes have a moist texture in which you’ll completely forget about needing eggs. Also, the pumpkin flavour isn’t terribly strong (not like when I use ripe banana as an egg re-placer), but it’s not flavourless, it’s just purely perfect. You’ll have to try it out yourself though!
